This recipe comes from Valley Farms Bed & Breakfast and Cottages in New Hampshire. This has to be the best chocolate chip cookie recipe I have ever tried. I usually follow their recommendation and double the recipe and freeze any extra dough so we can bake fresh cookies at the drop of a hat.
Ingredients
5-1/2 ounces butter
1 egg
1/2 teaspoon vanilla
1/2 teaspoon water
1/2 cup sugar
1/2 cup packed brown sugar
1/4 teaspoon salt
1 teaspoon baking soda
1-2/3 cups sifted flour
1/2 cup flake coconut
1/2 cup chopped pecans
8 ounces chocolate chips
Here's how I would recommend making these cookies: Slighly soften the butter, then whip it at high speed until fluffy. Blend in egg, vanilla, water, and both sugars. In a separate bowl, mix salt, baking soda, and flour. Slowly add to butter, egg and sugar mixture until just incorporated. Do not over mix. Then add coconut, pecans, and chocolate chips, mixing until just incorporated.
Place globs of cookie dough on a cookie sheet (I prefer ceramic stoneware). You may or may not want to slightly flatten your globs of cookie dough on the sheet, I have noticed that they do not always spread out after baking in the oven, leaving the centers slightly undercooked if you do not flatten them.
Bake at 375 degrees for about 12 minutes or until golden brown.
Makes: 1-1/2 dozen large cookies
