3/4 c. butter (not margarine)
3/4 c. packed brown sugar
3/4 c. granulated sugar
3/4 c. smooth or crunchy peanut butter   (we prefer smooth)
1 egg
1 tsp. vanilla extract
1 3/4 c. all purpose flour
pinch of salt
1/2 tsp. baking soda
about 1/3 c. granulated sugar
 
Preheat oven to 350F (175C). In a large bowl, beat together butter, brown sugar and 3/4 c. granulated sugar until creamy.  Add peanut butter, egg, and vanilla, beating until well blended.  Beat in flour, salt and baking soda.  Shape rounded teaspoons of dough into 1 1/4 inch balls, then roll in 1/3 cup granulated sugar, covering completely.  Place 2 inches apart on ungreased baking sheets.  Bake 10 -12  minutes or until golden.  Remove cookies from baking sheets; cool on racks. Makes about 3 dozen cookies.
